What are truffles?
A truffle is a fungus that grows underground. It can be also used as a spice. They are harvested with the help of truffle hunting dogs who sniff out their locations and alert their owners where to dig. In the past, truffle hunters used pigs because of their developed sense of smell.

Istrian truffles: one of the best in the world
There are four kinds of truffles you can taste in Croatian cuisine. The most prized and exclusive truffle is the White truffle (Tuber magnatum pico), famous for its nutty, earthy aroma. Because they don’t do well to high temperatures, as well as being extraordinary delicacies that should be enjoyed in its purest form, they are sliced very thinly and added as the last step before serving a meal. The White truffle is harvested from October to January.
The Black summer truffles (Tuber Aestivium) are harvested from May to November and are characterised by a much milder taste and smell.
The Black winter truffle (Tuber brumale Vittadini) is harvested from December to March and praised for its intense aroma. Lastly, the Black truffle (Tuber melanosporum Vittadini) is the second most expensive truffle in the world. This precious fungus is harvested all through winter and shines in many dishes.
